Formerly known as Blue Monday, this is an interestingly cube-shaped blue cheese originally conceived by Juliet Harbutt & Alex James while being produced at Highland Fine Cheeses by Rory Stone. Its texture is very moist and creamy; ripe and mature at 10 weeks, but excellent to eat at 14.
As it is European in style, it is not as rich as traditional English blue cheeses like Stilton, but still has a nice spicy flavour which is not overly salty like most blues.
